Marinating and preserving vegetables with the green Slow Food chef Manuel Ressi at the ”Kleiner Bären“
The techniques are ancient, the taste unsurpassed. Manuel and Claudia Ressi have dedicated
their work to the preservation of sun-ripened fruits, vegetables and herbs in their Bärenwirt inn in
Hermagor. Offering two very special workshops, the two of them are happy to pass on their knowledge of the high art of preserving, marinating and drying. In the show kitchen at the "Kleiner Bären", a former night watchman's house, the Toque chef with the green fingers shows you how to pack summer into a jar, thus you can enjoy the abundance of fresh berries, vegetables, flowers and roots all year round. In the workshops on preserving, you will get many tips from the top chef and there will also be lots to sample.
